Blueberry Overnight Oats

If you couldn’t tell, I am pretty obsessed with overnight oats. My site has a chocolate peanut butter recipe and this next one is blueberry and coconut. It is very tasty, healthy, and a great source of protein for your morning.

Here is the recipe:


  • 2 1/2 cups of oats
  • 2 tablespoons of chia seeds
  • 2 1/2 cups of almond milk
  • 3-4 tablespoons of shredded coconut (sweetened or unsweetened)
  • 2 scoops of vanilla whey protein
  • 3 tablespoons of maple syrup
  • blueberries for topping


  • mix all ingredients together in a large bowl with a fork except the blueberries
  • scoop out into 4 half glass cups and refrigerate 4-6 hours
  • before eating, scoop fresh blueberries on top and enjoy 🙂
